Asparagus Soup

1 bunch of asparagus

3 shallots

1 tsp. coconut oil

1 T. coconut butter

3 c. vegetable stock

After cleanse make with ½ cup chopped red potato added, for more body, if desired.

Heat 1 T. coconut oil and 1 tsp. coconut butter in pan. Sauté shallots (and potatoes after cleanse week) in pan for 3 min. careful not to burn. Add 2 cups vegetable stock, mix well and simmer until potatoes are near cooked.

Add asparagus mix well and cook for a few minutes (don’t let them get mushy). Let cool.
