LEMON CHICKEN MEATBALLS

Simple to make. Full on taste and a perfect protein to-go source.

1 pound ground dark meat chicken

1 large egg,

½ cup panko breadcrumbs

¼ cup finely grated Parmigiano-Reggiano

2 T. parsley finely chopped

2 garlic cloves, pressed

1 teaspoon lemon zest

1 teaspoon crushed red pepper

1 teaspoon coarse salt

2 T. extra-virgin olive oil

Directions:

  1. Preheat the oven to 425 degrees and line a rimmed baking sheet with parchment paper or a silicone baking mat.
