Mango Coconut Chia Pudding
This is so good, all the best flavors and a big dose of vitamin C, fiber and omega-3. Delicious for dessert or a snack. Very filling! It makes a lot of chia so if you have extra, toss it in your smoothie the next day! If you make the chia ahead, you can assemble the rest in 5 minutes 🙂
Scraping a vanilla bean or adding some vanilla powder is a great addition!
1 13.5 oz. can light coconut milk
1/3 c. white chia seeds
2 T. honey
