Maple Roasted Brussels Sprouts with Cranberries & Nuts

This is super fast and easy to make. For a lazy dinner, grill some chicken or fish and put this mixture on top of a bed of brown rice or quinoa and make your own rice bowl 🙂

1/2 giant stem of Brussels sprouts

4 oz. maple syrup

1/8 c. olive oil

Pink Himalayan sea salt

Fresh ground pepper

Mix-ins

1/4 c. dried cranberries

1/4 c. chopped marcona almonds, pine nuts or pistachios

Squeeze half a lemon over all once tossed together

Rinse rack of sprouts in water and wrap in waxed paper, microwave for 4 min. or steam until tender in covered pan.
