Zucchini, Tomato & Rice Frittata
- 2 T. brown rice
- oil spray
- 1 ½ tsp. olive oil
- ½ medium zucchini, coarsely grated
- ½ medium tomato, diced
- 1 oz. salt-reduced low-fat feta cheese, crumbled
- 2 tsp. chopped fresh parsley
- 2 large eggs
- 1 slice whole wheat bread
Place the rice and ½ cup of water in a small saucepan over high heat and bring to a boil, stirring occasionally. Cover and reduce the heat to medium-low. Simmer for 20-25 minutes or until the liquid is absorbed and the rice is tender. Remove from the heat and let stand, covered, for 5 minutes. Set aside to cool.
