Breakfast Egg Casserole
This is super fast and easy to make and is perfect for Christmas morning or when you have guests. Serve with a salad or fresh berries and coffee!
- 2 green onions chopped
- 1 cup – spinach fresh and torn
- 2 cups – Trader Joes frozen hash brown potatoes
- 5 eggs
- season with salt and pepper
- 1 1/2 cups – cheddar/jack cheese, shredded
- 1/4 cup picante sauce
- 4-6 strips of bacon crumpled for top (sub with Roma tomatoes for vegetarian)
