Savory Breakfast Egg Muffins

What to make on Sunday afternoon to have for breakfast Monday and Tuesday. These are so tasty and reheat well, they are also favorite to serve along side a salad for a quick lunch (they may not last until Tuesday)!

8 ounces turkey breakfast sausage, removed from casing and crumbled into small pieces
 (optional)

1 teaspoon extra-virgin olive oil

8 ounces mushrooms, sliced

1/4 cup sliced scallions or red pepper

1/4 cup shredded favorite cheese

1 teaspoon freshly ground pepper

I also added some torn spinach (tiny strips)

3 egg whites
