Cilantro Dressing and Dip
This creamy cilantro dressing is a great little condiment to drizzle on grilled or sautéed shrimp, fish tacos, tostadas or your favorite citrus-y salad.
So simple to make and full of good fats, enzymes and great for the skin and metabolism.
1 cup canned coconut milk, chilled overnight
1 c. fresh chopped cilantro
2 T. lime juice
1/2 c. olive oil
2 tsp. apple cider vinegar
1/2 tsp. sea salt
Fresh ground pepper
Place can in fridge overnight. Open can without shaking it or turning it upside down. Scoop out 1 c. of translucent milk.
