Brown Rice with Walnuts and Herbs

A super fast side dish rich in magnesium in the brown rice and heathy fats from the walnuts. Allow 50 minutes for this but if you prepare this brown rice ahead of time and you’re 45 minutes ahead of the game. and it will take you 5 minutes to assemble. Ahh the beauty of partial cooking 🙂

1 c. brown rice (rinsed)

2 c. water

Pinch of sea salt

1/3 c. toasted walnuts or chopped Marcona almonds

1/4 c. chopped favorite herbs (I used parsley, basil and oregano from garden)

Optional: add a handful of dried cranberries or minced dried apricots.
