Easy Vegan Chili

Serves 4


  • 2 tablespoons olive oil
  • 1 red onion, diced
  • 1 carrot, diced
  • 1 red bell pepper, diced
  • 1/2 jalapeño, seeded and diced
  • 2 cans (15 ounces each) Mexican-style diced tomatoes
  • 1 tablespoon chili powder
  • 2 cans (15 ounces each) black beans, drained
  • Salt and Pepper to taste

Heat oil in a large soup pot over medium-high heat. Add onion, carrot, bell pepper, and jalapeño. Cook 4 minutes, or until beginning to soften. Add tomatoes (with their juices).
