Feta, Spinach and Chia Omelette

My favorite lunch or second breakfast in a pinch!

2 eggs
3 T milk or water
1 T chia seeds
Cracked black pepper
Pinch pink Himalayan sea salt
Crumbled feta
1/2 c baby spinach
1 tsp olive oil

Beat eggs together with milk or water. Add chia seeds, black pepper and sea salt and let sit for 5 min.

Heat omelette pan with olive oil, add egg mixture, tilting pan and ‘lifting’ omelette to keep it cooking. When almost cooked add spinach and feta until spinach is wilted. Fold and serve!
