Halloween Chili with a Twist
What to do with those plentiful zucchini? Try this chili recipe for a little twist in the crockpot for Halloween. This chili can easily be made vegetarian by eliminating the meat.
1 pound ground beef or turkey
4 medium zucchini, chopped
2 medium onions, chopped
1 medium green pepper, chopped
1 medium red pepper, chopped
1/4 cup olive oil or coconut oil
4 garlic cloves, minced
2 cans (28 ounces each) chopped tomatoes
