Kale Cabbage Sesame-Lemon Salad
I had this amazing raw slaw at Siggy’s on Elizabeth Street this weekend and tried to recreate their recipe. Makes enough for 4-6 people or for leftovers on a wrap! Crunchy deliciousness! Serves 4-6
For the salad:
1 1/2 c. shredded cabbage
1 c. shredded ribbons of kale
1 cup shredded carrots (or less, if you don’t like it carrot-y)
1 T. red onion, paper thin sliced or diced
¼ c thin slices fresh scallions, chopped
large handful of fresh parsley or cilantro, chopped
1 T. sesame seeds
For the dressing:
1/4 cup fresh lemon juice
2 tablespoons diced shallot
1-2 tablespoons raw honey, or to taste
