Mexicali Spaghetti Squash

Fall is coming and what would it be without a bevy of squash recipes! This is great as a side dish to a salad or add some leftover shredded chicken to the mixture (what I’m doing tonight) to make it more of a main dish. Either way it is super fast and can look like a show-stopper at dinner with all the colors and tastes (okay, maybe I’m a little excited).
