Roasted Cauliflower with Pistachios, Walnuts, and Feta

This is great as a side; perfect to accompany a soup for lunch or appetizers for your holiday cocktails.

Sliced artisan or sour dough bread and brush with EVOO mixture

Head of cauliflower chopped small
0live oil
Sea salt
Fresh ground pepper
Crushed red pepper
1/4 c chopped pistachios and walnuts
1/4 c golden berry blend (trader Joes)
1/4 c Goat cheese or Feta crumbled
1-2 T White wine

Toast cauliflower in EVOO mixture and roast for 30 min in 350 degree oven. Set aside.

Make toasts by lightly brushing with EVOO mixture and toast until lightly crisp-keep an eye on them.
