Simple Mashed Cauli-Potatoes for Carb Cravers

When the weather starts getting cooler at night and it starts getting darker early, sometimes you just want some comfort food and this is it…..guilt free.

1 head cauliflower cut into small chunks.
1 clove garlic chopped, quartered
Maldon sea salt
1/2 c Greek yogurt (can also use milk or olive oil or a little of each)

Boil the cauliflower with one clove of garlic and a pinch of salt. Drain it in a colander, and put in a food processor.

Blend with yogurt.

Add fresh pepper and chopped scallions or chives and a pat of Kerrygold grass-fed butter (optional)
