Veggie Breakfast Quiche Cups

Need a fast protein packed breakfast idea to make the night before and take to go in the morning? Try these, they are filled with protein and diverse flavors and texture to satisfy and keep you full all morning. Play around with whatever veggies you have, peppers, kale, etc.

Ingredients:

1 10-ounce package frozen chopped spinach, thawed & drained

5 egg whites and 3 eggs (I use pourable egg whites)

3/4 cup shredded mozzarella cheese

1/4 cup diced onions

1/4 cup diced carrots

1/4 cup edamame

1 tablespoon Sriracha (optional)
