Almond Oat Energy Bites

Here is a simple ‘snack’ recipe to make on Sunday night (can totally do this during commercial breaks). Keep in the fridge so you can grab to go or have with a cup of tea as a mid-morning or mid-afternoon snack. You can easily substitute peanut butter for the almond butter to get a taste variation and roll in some chopped dried goji berries or cranberries.

  • 1 banana, smashed
  • 2 cups rolled oats
  • 1/2 cup almond butter
  • 2 tbsp maple syrup
  • 1/3 cup almonds
  • 3/4 tsp cinnamon
  • dash of sea salt
  • 2 tbsp chia or flaxseed (optional)
  • 3-4 tbsp coconut flakes (optional)
