Farro Arugula Mediterranean Salad

This is a great salad to keep on hand in the fridge for those moments when you come home and need a bite of something ASAP. It can work warm or cold. I love mixing a few thinly sliced radishes too!

Fix farro per package directions or sub in quinoa or amaranth. I made about 1 cup water to 1/2 cup farro

Chop and handful of arugula

3-4 Campari tomatoes (you can use cherry also)

1 T. chopped walnuts

Juice of 1/2 lemon

1/3 c. chop finely chopped english cucumber
