Super-Fast Spinach Pear Quinoa Salad

Make your own chopped salad. Super-fast to make and take for lunch if you have the quinoa cooked and ready to go in the fridge. I usually make a batch and keep there and lately I have been mixing in some amaranth, too. For added flavor cook with a shake of cinnamon in the quinoa and some broth instead of water-yum!

Tip: To make a chopped salad, use cooking shears and grab scissor handles with each hand. Chop away. So much easier!
