Black Bean Soup

This quick and easy black bean soup is great to make for a quick dinner when you just feel like ordering out. It isn’t the fanciest black bean soup ever, but it is delicious and satisfying. Pair it with a Taco Salad of arugula, pico de gallo, cilantro and a walnut sundried tomato pesto or some taco meat and a creamy cilantro cashew dressing. Black beans are a great way to slow the enzymes that turn starch to sugar and help to keep blood glucose levels (and your appetite) in line.
