Quinoa with Herbs and Chickpeas

This is what I would call a Sunday morning prep salad. It is what you can make super fast and easy on a Sunday to have for the week for lunch at least on Monday and Tuesday. You can add grilled chicken or a side of salmon or tuna. Sometimes I add in tiny pieces of leftover broccoli or kalamata olives and feta to ‘freshen’ it.
